Pumpkin Banana Almond Flour Cookies

These healthy Pumpkin Banana Almond Flour Cookies are the perfect guilt-free treat! Made with wholesome ingredients like ripe bananas, pure pumpkin, almond flour, creamy peanut butter, and a touch of agave for natural sweetness, they're soft, satisfying, and packed with flavor. Ingredients

½ cup Pumpkin Puree canned, not canned pumpkin pie filling

½ cup Mashed Banana (1 large)

¼ cup Peanut Butter (Unsalted) 

¼ cup Agave 

2 ½ cups Banana Almond Flour

1 teaspoon Pumpkin Pie Spices or Allspice 

1 teaspoon Vanilla Extract

Optional - Add ½ cup of Lily’s Dark Chocolate Chips

Topping

Melt ½ cup of Banana Frosting for 30 seconds and drizzle on this yummy cookie.

Instructions

1.                   Preheat the oven to 350°F. Line a large baking sheet with parchment paper.

2.                   Mash the ripe banana.

3.                   In a large mixing bowl, combine all the wet ingredients: pumpkin puree, mashed banana, peanut butter, agave, vanilla extract.

4.                   Stir well with a spatula.

5.                   Next, add your Banana Almond Flour and pumpkin pie spice. Mix well. Add your chocolate chips if desired.

6.                   Use a scooper to get 2 tablespoons of dough. Place each ball onto the prepared baking tray, leaving each cookie one inch apart. Flatten each cookie gently with the back of a spoon.

7.                   Bake the cookies for 18-22 minutes at 350°F. They should be golden brown on the top.

8.                   Set them to cool for 10 minutes, then transfer them to a cooling rack for about an hour before drizzling your Banana Frosting.
