Lemon Almond Flour Blueberry Loaf

Bright, nourishing, and made with love 💛 This Lemon Almond Flour Blueberry Loaf is crafted with all-natural ingredients—gluten-free almond flour, gentle natural sweeteners, and juicy blueberries. A feel-good bake that supports mindful living, balanced nourishment, and moments of calm, whether you’re on the mat, in meditation, or simply savoring something homemade.

Ingredients 

  • 4 large eggs, lightly beaten

  • 3 tbs coconut oil

  • 3 tbs Greek yogurt

  • 1/2 TB of lemon zest

  • 1 tsp vanilla extract

  • 2 cups of lemon almond flour

  • 2 tbs coconut flour

  • 1½ tsp baking powder

  • pinch salt

  • 1/2 cup monk fruit sugar

  • 1 cup blueberries

Preheat oven to 350℉. Line an 8×4-inch loaf pan with parchment paper.

1. In a large bowl, add the eggs, olive oil, Greek yogurt, lemon zest, lemon juice, vanilla and whisk together until smooth.

2. Next add almond flour, coconut flour, baking powder, salt, sugar and mix until combined mixture is thick. Fold in the blueberries.

3. Transfer mixture into the loaf pan and spread out evenly.

4. Add extra blueberries on top, press gently.

5. Bake for 45 minutes or until toothpick comes out clean and golden in color. Allow to set in pan for 15 minutes then transfer to wire rack and let cool.

6. Next frost your loaf with my lemon flavor frosting.
