Healthy Onion Rings & Dipping Sauce

Ingredients:

Chips (Low Carb):

  • 1 medium onion, sliced thinly 

  • ½ cup freshly grated parmesan cheese 

  • Organic olive oil spray 

  • Seasonings of choice – 1/4 tsp garlic powder, ¼ tsp onion powder, dash of paprika, pinch of salt & pepper

Sriracha mayo:

  • 1/3 cup plain Greek yogurt

  • Minced pickles (about 2 tsp)

  • 2 tbsp sriracha

  • 1 tsp lemon juice 

  • Salt & pepper to taste

Directions:

  1. Preheat oven to 400F

  2. Slice your onion about ¼ inch thick. 

  3. Line your baking sheet with parchment paper and lay down a generous layer of parmesan cheese. 

  4. Next, lay your onions onto the baking sheet separately. 

  5. Season with your powders and salt & pepper and spray with avocado spray, making sure you coat everything evenly. 

  6. Bake for 20 minutes until golden brown and allow to cool for an additional 2-3 mins. 

  7. As it’s cooling, make your sriracha by mixing all 4 ingredients together and serve with your onion rings.
