Healthy Cabbage Noodles with Alfredo Style

 Ingredients

1 Medium Cabbage (sliced)

1-2 TB of Extra Virgin Olive Oil

Sale & Pepper to Taste

 

Alfredo Sauce

 

2 Cloves of Garlic – minced

¼ Extra Virgin Avocado Oil

1/2 Cup of Greek Yogurt (plain)

½ Cup of Low-Fat Cream Cheese

1 Cup of Parmesan Cheese (grated)

¼ each of Garlic and Onion Powder

Salt & Pepper to Taste

 

Directions

 

Slice your cabbage into long thick strips. Heat your olive oil in a medium-large pan and add the cabbage with your salt and pepper.

 

Cook for 10 minutes or until the cabbage begins to soften. Remove from the heat and pan and set aside.

 

Next, in the same pan and add the avocado oil and garlic. Sauté for 30 seconds or until fragrant.

 

Stir your yogurt and cream cheese and simmer until it starts to thicken for about 5 minutes.

 

Turn heat down to low and whisk in the cheese and seasonings mixing until it is melted.

Add the cabbage back to the pan and toss with the sauce until it is heated through.

 

Transfer to a plate and add more parmesan if desired.
